A co-worker of mine mentioned that they would like to use their slow cooker more often. I then realized that I haven’t posted a new slow cooker recipe in a while. So I found this one to use up the roasting chicken that has been in my freezer for a while.
2 tsp salt
2 tsp. paprika
1/2 tsp. cayenne pepper
1 tsp. onion powder
1 tsp. thyme
1 1/2 tsp. black pepper
1/2 tsp. garlic powder
1 roasting chicken
1 chopped onion
1. In a bowl, add all the spices together. Mix.
2. Place chopped onions in the bottom of the slow cooker.
3. Rub spice mixture onto the chicken.
4. Cook on high for 4-5 hours. Use a meat thermometer to make sure it is done.
Very easy meal and takes very little prep time. I had all the spices right there at home so all I needed to buy was a white onion.
I found the skin a little spicy with the cayenne pepper but I just took the skin off. You could even omit or use less cayenne pepper. I decided to serve this roast chicken with Oven Roasted Potatoes and Honey Garlic Carrots.
I even left most of the onions and dripping in the crock pot and I plan on making a soup tomorrow with the left over chicken. A nice option instead of just plain left overs.
