Meatless Monday #7 is a very tasty pasta dish. The ginger adds a very nice tangy taste to the noodles. Apparently the sweet ginger scallion sauce is also an excellent marinade for steaks or chicken.
9 oz packet soba noodles
Salt and pepper to taste
2 tbsp. sesame seeds
Cucumber, thinly julienned, optional
Lime wedges, optional
Sweet Ginger Scallion Sauce
1 1/2 cup scallions, finely chopped
2 tbsp. ginger, minced
1/4 cup cilantro, chopped
2-3 tbsp. sesame oil
2 tsp. chili oil
1 tbsp. soy sauce
2 tbsp. rice wine vinegar
2 tbsp. honey
1 tsp. salt
1 tsp. black pepper
1. Mix all the ingredients for the sauce in a large bowl. Set aside for 10-15 minutes for the flavours to develop.
2. Boil the soba noodles as per the instructions on the package.
3. Add the noodles and sesame seeds to sauce. Toss gently. If desired, sprinkle with lime juice and add cucumber.
Really easy to make and ready in less than half an hour. I didn’t have any chili oil so I just used red pepper oil (for a jar of roasted red peppers) and added some chili pepper flakes.
Some of the uncommon ingredients for the sauce (sesame oil and rice wine vinegar) are also used in my recipe for Oven-Baked Pork ‘Fried’ Rice. You can make both recipes within a couple of months and not waste the oil and vinegar.
