Greek Salad

Lovely side dish or would be a great veggie filled lunch. The dressing is really good and simple too.

The Recipe:
3 large plum tomatoes, seeded, coarsely chopped
3/4 cucumber, peeled, seeded, coarsely chopped
1/2 red onion, peeled, chopped
1 bell pepper, seeded, coarsely chopped
1/2 cup pitted black olives, coarsely chopped
Heaping 1/2 cup crumbled feta cheese

6 tbsp. olive oil
2 tbsp. fresh lemon juice
1/2 tsp. fresh chopped garlic
1 tsp. red wine vinegar
1/2 tsp. oregano
1/2 tsp. dill weed
Salt and freshly ground black pepper, to taste

1. Whisk the dressing ingredients (oil, lemon juice, garlic, vinegar, oregano, dill) together until blended. Season to taste with salt and pepper.

2. Combine the tomatoes, cucumber, onion, bell pepper, and olives in a bowl. Toss with dressing.

3. Sprinkle feta over and serve.

Greek Salad

My Experience:

For the bell pepper, I used half green and half red. Next time, I would replace the tomatoes with cherry tomatoes sliced in half; less work.

I don’t have much to say because it was very tasty, very easy to make, and definitely worth a try. This recipe serves 6.
