Crispy, slightly spicy, and baked sweet potato fries. A very nice, healthy side dish that helps fulfill your craving for fries.
6 medium sweet potatoes (about 2 pounds)
2 tsp. sugar
1/2 tsp. salt
1/4 tsp. ground red pepper
1/8 tsp. black pepper
1. Preheat oven to 500F.
2. Peel potatoes; cut each lengthwise into quarters. Place potatoes in a large bowl; coat with cooking spray.
3. Combine sugar, salt, and peppers, and sprinkle over potatoes, tossing well to coat.
4. Arrange potatoes cut sides down, in a single layer on a baking sheet.
6. Bake for 20 minutes or until tender and beginning to brown, turning wedges over half way through.
Since I am only feeding 2 people and this recipe was just a side dish, I only used 1 large sweet potato. I also cut it into small strips (like fries) rather than wedges since the potato was larger.
Mine did not crisp up as much because I cooked it at 450F for about 25-30 minutes (I cooked them at the same time as 2 other recipes so I had to alter the temperature a little). So my sweet potato fries were a little less crispy than I would have preferred. Higher temperature would fix that though.
Instead of using cooking spray, I actually used a little bit of vegetable oil.
