A deli favorite made easy. This sandwich is a step up from a grilled cheese but just as easy (with a couple extra ingredients).
2 slices rye bread
2 slices deli sliced corned beef
2 slices Swiss cheese
2-3 tbsp. sauerkraut, drained, to taste
2 tbsp. Thousand Island dressing
1. Preheat a large skillet or griddle on medium heat.
2. Lightly butter one side of bread slices. Spread non-buttered sides with Thousand Island dressing.
3. On dressing side of bread, layer 1 slice of cheese, slices corned beef, sauerkraut, and second slice of cheese. Top with remaining bread slice, buttered side out.
4. Grill sandwich until both sides are golden brown, about 15 minutes per side.
So my boyfriend came home from work the other day with a huge block of Swiss cheese and I am trying new recipes with the wonderful cheese. Reuben sandwiches being my first.
Just as easy to make as grilled cheese with just a couple extra steps but totally worth it! Instead of corned beef, I used Montreal smoked meat, regular slice at the deli counter at the grocery store. The use of Thousand Island dressing surprised me in the original recipe but oh my god was it a great addition that I hadn’t thought of at first. And of course serve with a pickle on the side. Also good with fries as a side dish.
