This one is called “Simple Roasted Carrots” because all it is, is: carrots plus 3 or 4 ingredients that you already have at home. Simple, isn’t it?
3 tbsp. olive oil
1 tsp. kosher salt
1/2 tsp. freshly ground black pepper
Optional: 2 tbsp. fresh dill or parsley, minced
1. Preheat oven to 400F.
2. If the carrots are thick, cut them in half, lengthwise (otherwise, leave whole).
3. Toss them in a bowl with the olive oil, salt and pepper.
4. Transfer to a sheet pan (in 1 layer) and roast 20 minutes, until browned and tender.
5. Toss the carrots in the dill or parsley; season to taste and serve.
See, isn’t that easy? I even skipped the dill/parsley step because I didn’t have any. And guess what? The carrots were still fantastic!
If your carrots are really thick, you can also slice them diagonally in 1 1/2 inch slices instead. Do as you wish.
Roasted veggies are such a simple, go to side dish for any main. I haven’t found a veggie yet that I don’t like tossed in olive oil, salt and pepper; then roasted in the oven until browned and tender.
