I don’t have sweet potatoes often but every once in a while I have a craving for it. This time, let’s try baking it!
1. Preheat oven to 450F. Line cookie sheet with tin foil.
2. Scrub sweet potato under running water and dry well with paper towel. Poke all over with fork.
3. Place sweet potatoes on cookie sheet and bake 30 minutes. Turn and bake for another 30 minutes.
4. Remove any black, burnt juice from the sweet potato by scrapping it off.
The original recipe suggested serving with coconut butter and sprinkled with cinnamon. Another recipe suggested served with brown sugar. I just served as is.
