Meatless Monday #8! I know it’s not much of a dinner meal but it is a fantastic lunch. It’s like grown-up classy grilled cheese. I’ve been wanting to try this recipe for so long! I was just waiting for all the ingredients. And oh my is it tasty and worth the wait!
Meatless Monday #7 is a very tasty pasta dish. The ginger adds a very nice tangy taste to the noodles. Apparently the sweet ginger scallion sauce is also an excellent marinade for steaks or chicken.

I think roasting vegetables is my new favorite thing. I used to always boil my carrots and serve with butter and salt. This is WAY better! The honey flavour makes them so sweet and they are still crunchy!
