I love Pad Thai and it is unbelievable how easy (and much cheaper!) it is to make at home. You can easily make one serving at a time, or make the whole recipe and share the love.
This recipe may seem like a lot of ingredients but it isn’t too hard to make but will definitely impress any dinner guests.
Meatless Monday #18 is a one pot supper ready in 15 minutes! That’s my kind of work night meal. Store bought gnocchi (or you can make your own) with a flavourful simple sauce.
This recipe is a “light” recipe, using milk and flour instead of cream in the sauce. But the seared scallops paired with the peas is a wonderful flavour combination.
Meatless Monday #17! If you like spinach and artichoke dip, you will love this pasta! Very easy to make and ready in less than 30 minutes.
Wow. This may have just became my new favorite go to meal on a busy week night. Ready in less time than it takes to boil the water and cook pasta. It’s a good thing I always have shrimp in the freezer.
This is a fancy tomato soup that is super yummy. The tortellini makes it very filling and the sundried tomatoes and garlic add wonderful flavour.
Meatless Monday #12!! Can you believe that the first time I ever make lasagna, I make a vegetarian lasagna? Smelled amazing, tasted fantastic, and only took about 15 minutes to prepare.
Meatless Monday 11! This pasta recipe uses ricotta as a base for the sauce, which lowers the fat and increases the protein when compared to cream sauces. This is a great alternative to the classic Alfredo.
Meatless Monday #10! So I know that I have already posted a mac and cheese recipe for Meatless Monday but this one is WAY better and my original plans for tonight’s dinner got postponed to next week. So it worked out for the better since now I have a new mac and cheese recipe that I like more.
