Meatless Monday #7 is a very tasty pasta dish. The ginger adds a very nice tangy taste to the noodles. Apparently the sweet ginger scallion sauce is also an excellent marinade for steaks or chicken.

Another slow cooker recipe for the books. Not a huge fan of this one, but maybe you will like it. But the awesome thing about this recipe is that the recipe makes 2 batches and you can make it ahead and freeze it! No need to thaw.
