I was at the grocery store and saw that rockfish was on sale and was the cheapest fresh fish. I had never heard of rockfish before so I figured “why not?”. It just looked like a white fish and I figured I could find a recipe online. And I found this one, so I bought all of the ingredients and away I went.
I love fajitas and have been craving them for the longest time (I have to drive by Lonestar Bar and Grill every day on my way home and it is almost like torture). So I decided to pick up some of these key ingredients and make my own at home!
The other day my fiancé came home from work with a huge container of feta. I didn’t want to make myself sick of eating Greek salad so I found this recipe to use up some of this yummy (and free) cheese.
I’ve always wanted to try making chicken burgers using ground chicken. Finally, it went on sale at the grocery store and I just couldn’t resist. I love the combination of the sweetness of the pineapple with the spicy cheese and chili powder in the burger.
Super simple side dish that I love. I don’t eat beets quite as often as I would like because I hate having to boil them and I find it makes a mess. This roasting recipe however is a lot less messy, just as easy as baking a potato, and just as good as boiled (if not better).
I usually don’t like pork chops but I’m always willing to try a new recipe. This was a very simple recipe that didn’t require much time to marinate (which is always good when you are short on time) and I actually really liked the flavour of the rub.

I made these Vietnamese pickled vegetables to take to a family gathering and they were a great hit. Very easy to make but you might have trouble finding daikon (Chinese white radish) unless you go to a specialty store with more Asian products. Great as a snack on the side or as a topping on a sandwich (especially a Vietnamese banh mi sandwich, which I will have to try making soon!).
I got this recipe from the Food Network. I had some chicken breasts in my freezer that I wanted to use up in a new way and since it is summer, I looked for a simple grilled chicken recipe that didn’t require marinating (because I didn’t have the time) and this is what I found. Best part is the whole process of prep and cooking only takes about 25 minutes.
I decided that I wanted to have a Greek feast with pork souvlaki served as a gyros with a side of these Greek lemon potatoes. I was surprised at how they were crispy on the outside but fluffy on the inside. Perfect side dish for my Greek feast.
