I absolutely love peameal bacon. I usually just slice and fry in a frying pan and enjoy with a little mustard. When I saw this recipe, I just KNEW that I had to go buy some peameal bacon to try it out! Definitely worth the wait (I couldn’t find peameal bacon in my local grocery store for about 2 weeks, and it was driving me nuts with all the anticipation).
I have so many garden fresh radishes that I don’t know what to do with them. After a quick search on the internet, I found this recipe for radish butter. Apparently it’s a France French thing to pair radishes with butter. Well all I can say is it works! The butter cuts the sharp taste of the radish and season with a little salt and pepper, it tastes great on toast (or baguette in this case).
I made this recipe to top my Pork Burgers but obviously coleslaw is always good on it’s own as a side. I cheated and bought a pre-made coleslaw mix so all I had to do was whip up this awesome dressing and I was good to go!

This is the first time I’ve cooked a whole fish (minus the head) and I think it was a success. Granted, the fish was cleaned and headless, I was pretty impressed with myself. Not only does grilled whole fish look impressive, it’s often cheaper than buying pre-cut fillets at the fish counter. I bought frozen from the grocery store, but if you go to a fish monger, you can probably get fresh.
This recipe is a nice light dish to make on a hot summer night as a meal for 4 people or appetizers for 6 (the recipe makes 12 rolls). You want to make sure you have everything prepped and organized before you start cooking because the individual cook times are very short and as long as you are ready, you can go pretty fast. Once everything is cooked, you can even have everyone make their own rolls (less work for you!).
